How to Properly Slice Steak with Laguiole Knives
- Before slicing, let the steak rest for five minutes to reduce loss of moisture.
- Locate the muscle fibers or "grain" on your steak and determine which way they run. Fibers will be easier to identify on some cuts more than others.
- Always cut against the grain. This breaks up the dense fibers of the meat, making it easier to chew.
- Slice as you eat to retain as much juice as possible.
