First, gather your ingredients; for every half pound of shrimp, you will need half a teaspoon of kosher salt, one and a half teaspoons of vegetable oil and one teaspoon of chili powder. Combine all the ingredients in a mixing bowl and stir until the shrimp are well-coated in the oil and seasoning. In a cast iron skillet or non-stick pan, cook the shrimp for about two minutes on each side at high heat. As they cook, use a grater to zest a lime and sprinkle the zest over the shrimp. You can tell when the shrimp is done because it will be bright pink and opaque throughout—the best place to look is along the spine. Create your mini tostadas by spreading a generous layer of guacamole over a tortilla chip and topping with pico de gallo and a piece of shrimp.
