A Bellini is a classic Italian cocktail consisting of prosecco—a sparkling Italian wine—and peach puree. We dared to level-up this already perfect drink recipe by adding a thyme-honey simple syrup. The result is a delicious herbaceous cocktail, sure to impress.
ingredients
- ½ cup honey
- 6 sprigs fresh thyme
- 5 peaches, peeled, pitted and sliced
- 1 bottle prosecco, chilled
directions
- Set honey and ½ cup water in a small saucepan over medium heat. Stir with a wooden spoon until the honey has completely melted, add the thyme sprigs and turn off the heat. Let steep for 30 minutes and then discard the thyme sprigs, straining the syrup if necessary. Cool to room temperature and then transfer to the refrigerator to chill for 30 minutes.
- Put the peaches into a blender and puree until smooth. Transfer to the refrigerator to chill for 30 minutes.
- Put 2 tablespoons of peach puree and 1 to 2 teaspoons of the honey-thyme simple syrup into a champagne flute. Top with prosecco and gently stir. Fill to the top with more prosecco and serve at once.

Here’s how to easily peel peaches: Bring a large pan of water to a boil. Score an “X” into the bottom of each peach with the tip of a paring knife. Blanch in the boiling water for about 30 seconds and then immediately plunge into a large ice bath. The skins will easily peel right off.
You can use champagne in place of prosecco if you prefer.
If peaches aren’t in season, you can use frozen peaches. In fact, this is actually easier since frozen peaches are already peeled.
Simple syrup is just equal parts water and sugar. We’ve substituted the honey for the sugar in this Honey-Thyme Bellini recipe.
If you want a little heat in your cocktails, you can add a cut up jalapeno to the simple syrup with the thyme sprigs. Just be sure to strain the syrup after it steeps.
